Nutritive Value

Corn is an important source of energy and carbohydrates. This food is also formed, although in smaller proportion, by proteins of low biological value. As for its content of vitamins and minerals, highlights potassium, phosphorus, iron, folate, vitamin A and B vitamins (only in the yellow). On the other hand, the phytochemicals present in corn stand out, which are the following: anthocyanins (purple corn) and carotenoids (yellow corn).
